  • Monday, September 24, 6:00 pm – 8:30 pm – Fermentation 101 Workshop, Dinner, & Drinks

    Jamaica Plain’s fabulous restaurant, Brassica Kitchen, and Boston Ferments are teaming up on Monday, September 24 from 6 – 8:30 for a night of fermentation. The workshop will include a fermented dinner & paired fermented drinks, a short lecture on the history & culture of fermentation, and a hands-on fermentation demo.

    The evening kicks off with a fermentation-inspired vegetarian meal (which can be vegan and gluten free – please just let us know). We are pairing this meal with unique fermented cocktails (served in handcrafted cups which you will take home!) by our workshop leader.

    Next, we will have a short discussion on the biological, political, and symbolic ‘culture’ of fermented foods around the world with Jeremy Ogusky, a local fermenting enthusiast and JP studio potter. We will then learn to make one of the simplest lacto-fermented treats – sauerkraut! We will break into groups, chop veggies and everyone will go home with a jar full of fermenting cabbage.

    All participants will finish the workshop with a healthy belly full of fermented foods as well as the knowledge & confidence to begin fermenting in their kitchen, and a jar full of fermenting kraut. This starter class will cover everything you need to start fermenting on your own: philosophy, preparation and problem-solving.

    If you want to learn to ferment AND go home with a handcrafted fermentation crock (at 1/2 the price! – crocks are usually $100) to create your own sauerkraut, kimchi & pickles in, this is your chance. Our instructor, Jeremy, is a studio potter and creator of the crocks and he will bring a selection of colors to the workshop that you can choose from. Then you can prepare your own sauerkraut in the workshop in your own handmade crock.     Homemade pickles are a simple and fun way to guarantee that you can enjoy your cucumbers long after the last harvest. Join Newton Community Farm on Sunday, August 20 from 4 – 5:30, in the Barn Kitchen, to learn several different styles of pickle-making, including half-sours, old-world lacto-fermented pickles, and bread and butter pickles.   • Wednesday, July 20, 6:00 pm – 8:00 pm – Introduction to Canning Pickles and High Acid Preserves Workshop

    Wright-Locke Farm’s education programs for teens and adults are a great way to learn practical skills related to healthy living, small-scale agriculture, and the wonders of nature. All workshops take place on the Farm or at Saint Eulalia’s Parish (50 Ridge Street in Winchester – right next door) and are open to individuals ages 14+ unless stated otherwise. We hope you can join us for one or more workshops this growing season!

    On Wednesday, July 20 from 6 – 8 at Saint Eulalia’s parish, learn the basic science of hot water bath canning and techniques for making delicious homemade pickles, salsas, fruit or vegetable-based sauces, and more. Education Director Rebekah Carter will lead this hands-on workshop that explains the necessary ingredients, equipment, and methods for safely making shelf-stable products at home on a small scale. Participants will help prepare and can pint jars of local bread and butter cucumber pickles to take home and enjoy. Tuition fee: $25 per person (includes jar of pickles). Register at www.wlfarm.org.

    Want to learn how to preserve your garden produce? Cookbook author Marisa McCleellan will walk you through the steps of pickling and boiling water bath canning in this two-hour hands-on Dilly Bean workshop, sponsored by the Massachusetts Horticultural Society and taking place Thursday, August 1, from 6 – 8 at Elm Bank in Wellesley. You’ll learn how to tackle a mess of beans and have the opportunity to ask all your burning preserving questions.

    Marisa McClellan is a food writer, canning teacher, and dedicated pickler who lives in Center City Philadelphia. Her first cookbook, Food in Jars: Preserving in Small Batches Year-Round is now available.   • Monday, September 24, 6:30 pm – 9:00 pm – Jammin’ & Picklin’ Cooking Class

    Chef Maura Kilpatrick and pickle-geek Janice Goldsmith want to show YOU how jams and pickles can have you enjoying vegetables and fruits long after their growing season is over. Maura shares with us recipes for Pumpkin Jam, Pear Butter, and Apple Marmalade. Janice is up to her elbows in vinegar while demonstrating classic Bread & Butter Pickles, Corn Relish, and other inspired, tangy, crunchy condiments.

  • Sunday, September 20, 11 am – 4 pm – Urban Agricultural Fair in Harvard Square

    Join Cambridge Local First for its First Annual Urban-Ag fair being held on the very historic site of the first marketplace in Newtowne (1630’s). The 2009 Urban-Ag fair will bring to market some of the most incredible locally grown fruits and vegetables ever seen. Prizes will be awarded for the tastiest, the biggest, the most interesting, and in some cases the ugliest fruits, veggies, baked goods, honey, flowers, preserves, pickles and eggs! Cooking demonstrations from local chefs, gardeners, and “Cambridge School student-growers” will be held throughout the day. Come to sample recipes and/or to stock up on the bounty of our harvest from our local farmers markets, get tips from local experts on composting, community gardening, rain barrels, and bee-keeping!
