  • Wednesday, November 6, 6:00 pm – Brew Like a Viking

    Ale is one of the oldest beverages produced by humanity, a method of preserving calories from otherwise perishable grain while also providing a way to make water safe to drink. The Scandinavian people brewed both ale and mead, but their ale was quite unlike the IPAs available today. For one thing, hops did not come into common use as a flavoring agent until the 11th century, well into the Viking age. Instead, they flavored their beers with gruit, a mix of herbs which they could collect locally. These included mugwort, heather flower, yarrow, and meadowsweet. In this Cambridge Center for Adult Education hands-on class on November 6, we will brew a beer, with your choice of herbs in the gruit, and send you home with a gallon of the brew.   • Saturday, November 5, 1:00 pm – 4:00 pm – Homemade Herbal Pet Treats

    Treat your dog or cat to delicious homemade snacks and learn about the benefits of herbal infusions for pets in an educational, hands-on environment. You’ll learn a technique for making herbal, pet-friendly tinctures with chamomile, rosemary, mint, cannabis, and others, which we’ll incorporate into wholesome, limited-ingredient pet treats. All supplies will be provided by the instructor except for cannabis; if you want to make a cannabis infusion to take home, you must bring your own cannabis. Small vials will be provided to take the tinctures made in class home. You must be 21+ to take this class. The class and venue are in compliance with MA cannabis laws; no cannabis may be bought or sold with the venue or on the property. The instructor for this Cambridge Center for Adult Education class, to be held Saturday, November 5 from 1 – 4, is Melissa Smith.   • Saturday, September 10, 12:00 noon – 3:00 pm- Cooking with Edible Flowers

    Perfecting the balance of color, aroma, and taste are the hallmarks of Chinese cuisine. Chinese chefs know that presentation of a dish is of utmost importance because the visual composition of a dish is the first thing perceived by the diner. Because of this, the Chinese often incorporate edible flowers into their meals to enhance visual enjoyment. In this class we’ll learn how to cook with edible flowers and make eye-catching dishes with common vegetables. In this Cambridge Center for Adult Education class taught by Jade Li on September 10 at noon, we will be making Daylily Flower Salad, Bok Choy Fried with Glass Noodle, and Cauliflower Fried Rice.

    Jade Li is from Zigong, a big city in Sichuan Province known for its dinosaurs, salt mines and flavorful dishes; there’s a traditional Chinese saying, “Eating in Sichuan, taste in Zigong.” Zigong cuisine is called Yan Bang Cai, known as Dishes of Salt School. The main concept is “fragrant, spicy and fresh” . Beware, the locals love extra spicy food prepared as hot pot, dry pot, or stir-fried. Jade cooks recipes perfected by her family over many generations, and loves to share her food with friends from across the world who have same passion to try new, exotic cuisines. Jade Li also offers authentic Chinese catered experiences for small groups or events, as well as private lessons for those wanting to develop their Sichuan cooking skills.     Join Cambridge Center for Adult Education’s Celebrity Chef Master Class series with, you guessed it, celebrity chefs, for an unforgettable cooking and learning experience. Roll up your sleeves and learn cooking techniques side-by-side with local culinary stars. On Wednesday, November 7, from 6 – 9, Tony Maws, chef and owner of Craigie On Main and The Kirkland Tap and Trotter, presents Chef’s Whim: Farmer’s Market Squashes. One of Tony’s favorite fall finds at the farmers market is the large variety of colorful and delicious squash. Tony will lead us in hands-on learning as he shares secrets of seasonal squash in all its shapes, sizes and colors, and teach us various ways to cook this fall favorite. This is a perfect primer before Thanksgiving too! Class will be held at 42 Brattle Street in Cambridge.

    One of the country’s most respected chefs, Tony Maws is a champion of our local farmers markets and sustainable practices. As chef/owner of the acclaimed Craigie On Main in Cambridge and The Kirkland Tap & Trotter in Somerville, Tony prepares fresh local vegetables as stars of the plate at both his restaurants.     Create soothing, healing salves and lotions to pamper your skin, at this Cambridge Center for Adult Education class on Saturday, July 14 at 1 pm. Learn the basics of making herbal infused oils, salves, lotions, for your own skin-soothing preparations without any synthetic ingredients; especially helpful for those with sensitive skin. Bring home a lip balm, healing salve, and lotion, each scented with your individual choices of essential oils. These products make marvelous gifts and are simple and easy to make!     Discover the essential elements and principles of floral design while creating three different styles of arrangements.     In this new Cambridge Center for Adult Education one week course we will seek to understand the elements of landscape painting through methods of abstraction and simplification. We will begin by studying our motif on it’s simplest level to comprehend what we are truly seeing.
